Healthy Peach Cobbler

Cobbler is my weakness and with the year just beginning and all those new years resolutions to stay away from the sweets, I’ve creating healthy versions of my favorite recipes.  This peach cobbler recipe has reduced sugar, dairy free and tastes amazing.  Your whole family will love this peach treat!

Ingredients
  1. 1/2 cup raw honey
  2. 1 tablespoon cornstarch
  3. 4 cups frozen peaches
  4. 1 teaspoon cinnamon
  5. 1 cup flour
  6. 1 tablespoon stevia
  7. 1 1/2 teaspoon baking powder
  8. 1/2 teaspoon salt
  9. 3 tablespoon coconut oil
  10. 3/4 cup unsweetened vanilla almond milk
Instructions
  1. Preheat oven to 350 degrees, bake for 30 minutes
  2. Mix honey, cornstarch, peaches, and cinnamon in a medium saucepan, cook over medium heat for 10 minutes. Peach should be soft and liquid should be the consistency of syrup.
  3. Mix flour, stevia, baking powder, salt in the bowl add softened coconut oil. I warmed it in the microwave for a few seconds to soften it. Blend flour mix and coconut oil until it looks like small pebbles.
  4. Add vanilla almond milk and mix, drop biscuits onto cooked peaches.
  5. Bake at 350 for 30 minutes until biscuit brown on top.

    Yum!! I need to try this! I love Cobblers and have never attempted to make any, but this sounds pretty easy to do!

    Believe it or not – I’ve actually never tried peach cobbler. I don’t think I’ve ever seen it, to be honest. But by the look and sound of this, it might just be something I need to try!
